The Apple support page, iCloud Security Overview, has been updated to reveal that Safari bookmarks have end-to-end encryption.

Will it be updated with the release of iOS 15?

Safari’s end-to-end encryption previously only applies to history and iCloud tabs, but we’ve found that it’s now applicable to bookmarks as well.
 
The update took place between September 19th and September 25th, so it’s likely that it was with the release of iOS 15.

What features haven’t been end-to-end encrypted yet?

The new end-to-end encryption features are notable enough, but you should also pay attention to features that haven’t been end-to-end encrypted yet, MacRumors commented.
 
For example, features such as iCloud backup, photos, reminders, and notes only apply 128-bit AES encryption.
